Wildflower Honey Ginger Beer Glazed Wings

These crispy wings, glazed in an irresistible blend of Antigua & Barbuda Wildflower Honey and locally crafted ginger beer, deliver a delightful burst of sweet, spicy, and tangy Caribbean flavor. Perfectly crisp on the outside and tender within, these wings offer an extraordinary balance of island-inspired sweetness and zest.

Ingredients:

  • 3 pounds chicken wings, separated into drumettes and flats
  • ½ cup Antigua & Barbuda Wildflower Honey (ABWFH)
  • 1 cup Caribbean ginger beer
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1 teaspoon lime zest
  • ½ teaspoon red pepper flakes (optional for added heat)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • Chopped scallions or cilantro, for garnish

Instructions:

  1. Preheat Oven:
    • Set oven to 425°F (220°C) and line a baking tray with parchment paper or foil.
  2. Prepare and Bake Wings:
    • Toss wings with olive oil, salt, and pepper, then arrange on the prepared baking tray.
    • Bake for 30-35 minutes until crispy and golden, turning halfway through.
  3. Make Honey Ginger Glaze:
    • In a saucepan, combine wildflower honey, ginger beer, soy sauce, and garlic. Bring to a boil over medium-high heat.
    • Lower heat and simmer, stirring frequently until thick and syrupy, about 15 minutes. Stir in fresh ginger.
  4. Glaze the Wings:
    • Remove wings from the oven, and brush generously with honey ginger glaze.
    • Return to the oven and bake an additional 5-7 minutes until caramelized and sticky.
  5. Serve:
    • Garnish with chopped scallions or cilantro. Serve immediately for maximum crispness and flavor.

Chef’s Plating Suggestion: Present the wings on a wooden serving board or vibrant Caribbean-themed platter. Offer lime wedges and extra sauce on the side for dipping or drizzling.
